No matter what InfoItem I select (stored document, linked document, rich text item, even a file in a linked Windows Explorer folder), the Show Explorer Menu menu item is grayed out, as is the toolbar button, and neither Ctrl-E nor Ctrl-Shift-E do anything.

What am I doing wrong?

It looks like that was broken in 1.1 -- thanks for reporting it. One method that still works is Ctrl+right click or Ctrl+context menu key.
