You have ALT+C for an easy way to select a date.
Could the same ALT+C bring up a time select window when the Remind Time field is selected?
The time select window could be analog (nice big clock wher eyou can click and drag the hands) with a nice big indicator that indicates AM or PM to avoid nasty mistakes.
Or possibly a drop down box showing times in set intervals (user changeable?) say of 15 min intervals.
At the moment it's a bit fiddly setting a time. (and that checkbox is obscenly small!).
